The Healthy Food Corner – Curried Aubergine and Sweet Potato


Imagine this: You want to cook something awesome, but you don’t have a lot of ingredients and there is no time to run to the store ? Well I found myself in the very same situation a few days ago. I raided the fridge and went to the basement to see what we still had. After a quick bit of googling, I figured out that my aubergine (egg plant) and sweet potato make a great combo.

I decided to make a killer dish that can be eaten on it’s own as a vegetarian dish or as a side dish with some meat.

Curried Aubergine and Sweet Potato (serves 2)


  • 1 aubergine (100-150 grams per person)
  • 1 sweet potato (150 grams per person)
  • 1 onion (75 grams per person)
  • 1 tbsp coconut oil (any cooking oil will do)
  • 2 tbsp curry paste of choice
  • 150 ml water

Peel the sweet potato and cut into bite size chunks. Peel the onion and slice into rings or just dice. Cut the aubergine into bite size pieces. You don’t need to peel this one, but you can. My boyfriend prefers it peeled.

Heat the oil in a large frying pan. Add the onion and sweet potato. Cook them until they start to soften. That takes about 3-4 minutes.

Add the aubergine and let that cook for a few minutes, until the onion and sweet potato stat to go golden. Don’t forget to stir from time to time. At this point add the water and curry paste. Stir it all together.

Cover the pan and put on a low heat. Let is simmer for about 10 minutes or until it’s all nice and soft. After 5 minutes check if you need to add a little more water. I ended up using twice the amount of water I started with.

Serve with rice or naan bread for a vegetarian dish or have about 150 grams of meat with it. Lamb and chicken go very well with this dish. Put your feet under the table and ENJOY !!!
